From a snug 22 m² single-suite tucked under the chestnut beams to the 58 m² Bertelli Suite that takes the whole eastern wing, each room is a one-off composition of stone, linen, reclaimed oak and estate-grown herbs. The from-rates shown are our direct nightly rates for two guests, low season, and include the cooked-to-order breakfast.

We have stayed in nine small hotels across Tuscany over the years and never once come back to the same one. Salvia is the exception. Our room — Rosmarino — had a stone tub set into a wall older than most countries we have visited, and the breakfast the next morning was three quiet courses of whatever was pulled from the garden that day. We booked through the hotel directly; the rate was lower than anything I found later on Booking, and Marco replied to my email in under twenty minutes. We have already booked for autumn.
